Basic Pizza Dough

Temperature: preheat to 450 F.
Time: about 15 minutes with topping
Yield: 2 standard pizza crusts
1 cup lukewarm water
1 teaspoon sugar
1 Tablespoon Yeast
2 1/2 - 2 1/4 cups flour
2 Tablespoons olive oil
3/4 teaspoon salt

Add sugar and yeast to water, let stand 10 min. Add salt oil and 1 cup flour, whisk to a smooth consistency and gradually add in 1 more cup of flour. kneed in the additional 1/4 to 1/2 flour. Divide into 2 balls, kneed each one a little more and place in well oiled bowl to rise to double the size. Place a ball into a pizza pan and press down to fill pan.
