Curried Lentil Soup

Cooking time: 45-50 minutes
Note: Great, easy and hearty, the orginal recipe called for twice the lentils but even this version is quite thick.
INGREDIENTS:
1 1/2 cups red lentils
1 Litre Water
1 Liter Chicken, Beef , or Vegetable Broth
2 Large potatoes, Diced
1 garlic clove, crushed
1 large onion, diced
1/2 teaspoon salt
1/2 teaspoon cumin powder
1/2 teaspoon curry powder
Pepper to taste
2 carrots, diced
1 Tablespoon Lemon
Bring water and broth to a boil. Add washed lentils and rest of ingredients except carrots and lemon juice. Bring to a boil. Reduce heat and simmer 30 minutes. Add carrots and simmer another 15-20 minutes. Stir in lemon juice. Serve.
