Herbed Tomato Soup

2 Tablespoons butter
1 medium onion, diced

2 large carrots, diced
2 stalks celery, diced
2 cups water
2 cups stock (chicken or vegetable)
1- 28oz can of diced tomatoes

1 teaspoon salt
1 teaspoon basil
1/2 teaspoon thyme
1/4 teaspoon savory

1 teaspoon sugar
1 pinch nutmeg
black pepper and tobascco to taste
Fry onion in butter (add a little oil to the butter to avoid browning) til soft and transluscent. add the rest of the ingredients. Bring to a boil and simmer 45 minutes.
