Carrot Cake (or Muffins) (1/2 recipe click here)

Time and Temperature: 350 F - 30 min.
Yield: 2 (8 x 8 in.) square pans
INGREDIENTS:
1 1/2 cups flour
1 1/2 cups brown flour

2 t. each b. soda & b. powder
1 t. ea. salt & cinnamon
1/2 t. nutmeg
1/4 t. each ginger & allspice
1 1/2 cups brown sugar
2 eggs beaten
1 cup buttermilk
2/3 cup oil
1 t. vanilla
3 cups grated carrot
1 cup each raisins and walnuts
INSTRUCTIONS:
stir dry ingredients together. beat together wet ingredients, add carrots, raisins and walnuts. bake
