U.B.C. Apple Streusel Muffins

Time and Temperature: 400F for 20-25 min.
Yield:12 muffins (recipe for 6)
INGREDIENTS:
2 cup flour
1 cup sugar
1 T baking powder
1/2 t baking soda
1 1/4 t ground cinnamon
1/2 t salt
2 large eggs, beaten
1 cup sour cream
1/4 cup butter melted
1 cup finely diced, un-peeled, apple
Topping:
1/4 cup sugar
3 Tablespoons flour
1/4 teaspoon cinnamon
2 Tablespoons cold butter
Stir together dry ingredients. Combine all wet ingredients except apples. Add wet to dry and then fold in apples. Divide batter between 12 large muffin cups. Sprinkle with Streusel topping.

To make toping combine all ingredients and blend with fingers till crumbly.

Note: This is the best apple muffin I know and easy to make as well, just a little on the decadent side for a muffin.
