Banana Chocolate Chip Muffins
Source: Grace's Place with reduced sugar and fat
Time and Temperature: 350 F for 20 min
Yield: 6 muffins
INGREDIENTS:
3/4 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
3 Tablespoons chocolate chips
1 medium egg
1 banana
2 Tablespoons olive oil
2 Tablespoons sugar
1/2 teaspoon vanilla
Sift together dry ingredients and then stir in chocolate chips. Mash banana, add egg, oil, sugar and vanilla and beat together. Add dry ingredients. Mix till no wet shows.
Note: The reduction of fat and sugar in this recipe actually makes these muffins a lot more tasty.
