Carrot Cake (or Muffins)

Time and Temperature: 350 F (30 min for muffins, may take longer for cake)
Yield:12 muffins or one rectangle cake pan
INGREDIENTS:
3/4 cup flour
3/4 cup brown flour
1 t each baking soda & baking powder
1/2 t each salt and cinnamon
1/4 t. nutmeg
1/8 t each ginger & allspice
1/2 cup brown sugar
1 egg
1/2 cup buttermilk

1/3 cup oil
1/2 t. vanilla
1 1/2 cups grated carrot
1/2 cup each raisins and walnuts
mix dry ingredients, mix wet ingredients, mix together and add carrots, raisins and walnuts at the end. stir just til everything is wet.
