Chocolate Zuccini Muffins (or Bread)

Yield: 12-18 muffins or 2 loaves (click for 6 muffin)
Time and Temperature: bake at 350 F (30 minutes for muffins, 60 minutes for loaves)
INGREDIENTS:
3 eggs, beaten
1 cup vegetable oil
1teaspoon vanilla
1 1/2 or 1 cups sugar (one cup for more adult tastes
2 cups grated zuccini
3 cups flour
1/2 cup cocoa
1 teaspoon cinnamon
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
Beat together eggs, oil and vanilla, then add in sugar and then zuccini. Sift dry ingredients together and mix, then add to wet ingredients and stir just long enough til everything is moistened.
