Bake at 375 F.

Note: Amounts are for 1 pie and are very flexible. |

1 pie crust
1 large onion, chopped
1 green pepper, chopped
salt & pepper, to taste
2 medium sized carrots, chopped
1 1/2 cups leftover turkey or chicken
|
|
1 cup turkey or chicken gravy
grated parmesan
tomatoes, sliced
corn flakes (or crumbled potato chips)

Pre-bake pie crust shell to pale brown
Chop turkey or chicken. cook carrots til tender. (boil them or microwave on high for about 3 min.)
fry pepper and onion with lots of salt and pepper and mix with turkey, carrots and gravy. put filling into crust and top with a little grated parmesan, tomatoes and Cornflakes. Cover with foil and bake for 30-45 minutes or so. Remove the foil for the last 10 minutes to brown the topping.
These pies freeze well and make and excellent emergency dinner.
