Yield: enough for 15 egg batch of Paska
Note:This was of course enough spread for the original 15 egg batch of paska! (From the Mennoniite Treasury of Recipes – 1961 edition)
INGREDIENTS:
4 cups cottage cheese
9 hard cooked egg yolks
1 cup cream
1 cup butter
1 cup sugar
1 tsp. lemon rind
1 Tbsp. lemon juice
Press cheese and yolks through a sieve, Bring cream to a boil and then cool. Cream together butter and sugar and add the other ingredients. Mix thoroughly.
