Butter Tarts

Time and Temperature: 400 F about 10 min.

INGREDIENTS:
Crust:
1 1/4 cups flour
Pinch salt
1/2 cup shortening
Water


Filling:
1 egg
1/2 cup brown sugar
1/2 cup corn syrup
1Tablespoon soft butter
1 teaspoon vinegar
1 teaspoon vanilla
pinch salt
pinch allspice
1 cup raisins (or walnuts or pecans)
Mix pie crust as usual, roll out and cut small rounds, press into muffin tins. For filling Wisk together all ingredients except the raisins. The mix should look grainy, don't overmix. Sprinkle a few raisins into the bottom of each muffin crust and spoon enough filling overtop to cover. You can either store leftover filling in the fridge or just spread the remainder evenly amongst the tarts. Bake in preheated oven for about 10 min.

Note: These are easy, fast and not that picky. use your own favorite crust recipe, reduce sugar, skip spice or change it, drizzle chocolate on top of the pecan or walnut version and serve with a glob of whipping cream if you want to dress them up a bit.
