Carrot Cake (or Muffins)

Time and Temperature: 350 F - 30 min.
Yield: 1 8 x 8 sq pan
INGREDIENTS:
3/4 cups flour
3/4 cups brown flour

1 t. each b. soda & b. powder
1/2 t. ea. salt & cinnamon
1/4 t. nutmeg
1/8 t. each ginger & allspice
3/4 cups brown sugar
1 eggs beaten
1/2 cup buttermilk
1/3 cup oil
1/2 t. vanilla
1 1/2 cups grated carrot
1/2 cup each raisins and walnuts
INSTRUCTIONS:
stir dry ingredients together. beat together wet ingredients, add carrots, raisins and walnuts. bake
