U.B.C. Apple Streusel Muffins

Time and Temperature: 400F for 20-25 min.
Yield:6 muffins (recipe for 12)
INGREDIENTS:
1 cup flour
1/2 cup sugar
1 1/2 teaspoon baking powder
1/4 t baking soda
3/4 t ground cinnamon
1/4 t salt
1 large eggs, beaten
1/2 cup sour cream
2 T butter melted
1/2 cup finely diced, un-peeled, apple
Topping:
2 T sugar
1 1/2 Tablespoons flour
1/8 teaspoon cinnamon
1 Tablespoons cold butter
Stir together dry ingredients. Combine all wet ingredients except apples. Add wet to dry and then fold in apples. Divide batter between 6 large muffin cups. Sprinkle with Streusel topping.

To make toping combine all ingredients and blend with fingers till crumbly.

Note: This is the best apple muffin I know and easy to make as well, just a little on the decadent side for a muffin.
