Applesauce Bran Muffins

Bake at 400 F. 20 minutes

Note: adapted from the original by Christine Unger. Surprisingly tasty and excellent way to use up bran buds left from mom's visit!
INGREDIENTS:
1 c. Bran Buds
1/4 c. vegetable oil
1 egg
2 T. water

1 c. unsweetened applesauce
1/4 c. sugar
2 tbsp. brown sugar
1/4 cup buttermilk
1 c. all-purpose flour
1 tsp. soda
1/2 tsp. salt
1 tsp. cinnamon
Mix together bran, egg, oil, applesauce, sugars, buttermilk and water, let set at room temperature for 30-45 minutes. Stir together flour, soda, salt and cinnamon. Add to bran mixture and mix at until flour is moistened. Grease or line muffin tins with paper liners. bake at 400 degrees for 20 minutes or until they spring back when touched in center. Serve hot. Yield: 12 muffins.
