Pineapple Zuccini Muffins

Time and Temperature: 350 F for 50 min
Yield: 2 loaves or 1 1/2 dozen muffins approximately
INGREDIENTS:
3 eggs, beaten
1 cup vegetable oil

2 teaspoons vanilla
1 10 oz can crushed pineapple, drained
2 cups grated zuccini
3 cups flour
11/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 3/4 cups sugar
1 teaspoon cinnamon
1teaspoon nutmeg
Beat together eggs, oil and vanilla. Add pineapple and zuccini. Stir together dry ingredients. Add to liqueid mixture and stir together only until flour is moistened. Bake at 350 F for about 50 minutes. Makes muffins or 2 loaves.
