Time and Temperature: 350 F for 50 min

Yield: 2 loaves or 1 1/2 dozen muffins approximately |
INGREDIENTS: |

3 eggs, beaten
1 cup vegetable oil
2 teaspoons vanilla
1 10 oz can crushed pineapple, drained
2 cups grated zuccini
|

3 cups flour
11/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 3/4 cups sugar
1 teaspoon cinnamon
1teaspoon nutmeg |

Beat together eggs, oil and vanilla. Add pineapple and zuccini. Stir together dry ingredients. Add to liqueid mixture and stir together only until flour is moistened. Bake at 350 F for about 50 minutes. Makes muffins or 2 loaves. |
